Pao Bhaji 



A very popular dish cooked in a blend of 12 spices 

Ingredients:

8 pavs (soft buns) 
Butter to shallow fry 
For Bhaji:
1 capsicum, chopped finely 
2 onions, chopped finely 
2 tomatoes, chopped finely 
2 1/2 cups chopped mixed vegetables 
1/2 cup peas 
2 tbsp. Butter 
2 tsp. pavbhaji masala 
1 1/2 tsp. chili powder 
1/4 tsp. turmeric powder 
Salt according to taste 
1 cup water (in which vegetables were boiled) 
1/2 tsp. grated ginger 
1/2 lemon juice 
Garnish with:
1 tbsp. Coriander chopped 
1 onion chopped 
Small pieces of lemon 


Serve with Serve hot with bhaji, a piece of lemon and chopped onion. 


Cooking Method:

1.Pressure cook mixed vegetables and peas till well done. Mash them coarsely after draining. 
2.Heat butter in a pan. Add ginger-garlic, capsicum, onion, tomatoes. Cook till very soft. 
3.Add paobhaji masala, chili powder, turmeric, salt, and cook again for 5 minutes. Bring it to boil. 
4.Simmer till it becomes thick, keep on stirring and mashing pieces in between. Add lemon juice, stir. 
5.Garnish with chopped coriander and a block of butter. 
6.For the Pavs Slit them horizontally leaving one edge attached. 
7.Apply butter and roast open on a tava( griddle) till hot and soft with the surface crisp on both sides.
